Carry On: Phoenix’s new destination takes flight with retro travel vibes

Inspired by the jet-setting lifestyle of a bygone era, Carry On offers an immersive experience that blends aviation aesthetics with a world-class cocktail program.

The inspiration behind Carry On

The idea for Carry On was first sparked when one of the owners, Thor Nguyen, was out enjoying drinks in San Francisco. “Thor actually was imbibing on his own when he gave Teddy a call to have a plane-themed bar,” Jax Donahue, beverage director of Pretty Decent Concepts, said. “From there, the ‘70s era was introduced to make it reflective of the golden age of travel and how it represented excitement, luxury, and exploration.”

This vision evolved into a carefully curated space that exudes vintage airline charm. Every detail, from the lighting to the decor, echoes the feel of an upscale airport lounge from decades past, where first-class service and sophisticated cocktails come standard.

A first-class cocktail experience

Carry On isn’t just about aesthetics—it’s also about taking guests on a flavorful journey around the world. The bar’s menu follows a unique annual concept.

“Each year, we’ll have a different ‘flight’ themed around iconic destinations, with flavors and spirits reflecting the departure and arrival points,” Donahue said. “These menus change annually to keep things fresh and exciting… As time goes on, we’ll continue to explore different cities and their unique culinary and cocktail traditions.”

Currently, guests can expect influences from both San Francisco and Mexico City. Once boarded on the plane, the 90-minute journey departs from San Francisco, landing in Mexico City. 

Your flight ticket gets you a welcome cocktail upon boarding and their signature in-flight snacks— house made peanuts and short bread cookies. Additional beverages can be purchased throughout the flight.

Guests can also purchase Captain’s Club tickets that include your welcome cocktail and snacks, three craft cocktails of your choice and a four-course light bite menu.

While it’s a standalone concept, Donahue likens it to being the “bachelor cousin” of The Trophy Room. “It’s venturing off to open a flight school, so to speak! That said, this bar is its own thing, with a distinct identity and experience.”

Redefining hospitality

The mission behind Carry On is as much about redefining hospitality as it is about crafting exceptional drinks. 

“Many bars feel too stuffy or intimidating, but Carry On is meant to be the opposite,” Donahue said. “We want to offer incredible cocktails made with modern techniques, served in a way that’s inviting and effortless.”

Long-term, their hope is to set a new standard in the industry— proving you can create top-tier drinks and experiences without burning out your team.

“It should feel nostalgic, joyful, and first-class—an escape from the ordinary that lingers long after their visit,” Donahue said. “My favorite part? The attention to detail— from the martini glass tilting as turbulence passes to the light above the bathroom and the telephone to the cockpit. These small touches make the experience truly unique and memorable.”
